Watermelon Feta Salad


  • 2 lbs. cubed watermelon

  • 7 oz. block of feta cheese in brine (I like Trader Joe’s Israeli Feta)

  • Handful of fresh mint, whole or chopped

* Crumbled feta is not recommended.


Get a large bowl with a top. Add in all the ingredients and mix together.

Cover and leave in the refrigerator for a few hours.

Plate and serve!

This is great for a light snack by the pool, at the beach, or put them on a skewer to serve at a party.
